Veggie muffins for baby-led weaning

I love this recipe.  It's one that doesn't take all that long to throw together and has been popular with both children (and maybe with me too!).  It's an irresistible combination of cheese and veggies with a little extra sesame seed backdrop.

Stats: - makes 12 muffins

half a courgette
one large carrot
90g breadcrumbs
2tbsps grated cheddar
2tbsps grated mozzarella
1tbsp tahini
1 tsp baking powder
2tbsps water
1tbsp olive oil

Preheat oven to gas mark six.  Lightly spray a muffin tin with oil to prevent the muffins from sticking to it.

Grate the courgette and squeeze out as much water as possible.  You can do this in a clean tea towel. Grate the carrot.  Mix all of the ingredients together in a large bowl.

Form into balls and place in muffin tin.

Cook for 20 minutes.  Allow to cool before giving to your child.
